Chicken Adobo With Boiled Eggs Was Our Dinner Last night






The snow kept pouring yesterday, they looked floppy and big. When the weather is too cold, I usually crave for food that will warm my stomach.  Last night I cooked chicken adobo, I fried some swai fish too  and cooked jasmine rice for dinner. You might be wondering why there are chicken eggs on my adobo? There are many ways  to cook chicken adobo and mine is just my own recipe. I love to add eggs to add more protein to my already rich in protein food :) My kids love to eat egg and I have started feeding egg yolk to my baby that is why I added eggs to my adobo.  


My Chicken Adobo


Here's what you need:

6 pcs chicken breast,
6 pcs eggs, pre-boiled them in a separate container, peel and set aside
1/4 slice of large red onion
1/4 slice of green bell pepper
6 cloves garlic
2 inches ginger
1 tablespoon teriyaki sauce
1/2 cup white vinegar
1/2 cup soy sauce
1/2 cup water
2 tablespoon vegetable oil
   black pepper and salt to taste



Procedure:

  • saute garlic, onion, ginger and add the slice chicken breast and stir
  • pour vinegar, soy sauce,teriyaki sauce and water, bring it to boil then lower the heat. Cover and simmer for 30 minutes until sauce is reduced and thickened and chicken is tender, stir occasionally. Add eggs and green bell pepper, a dab of black pepper and salt, stir, cover and cook for 20 more minutes
  • serve with steamed rice, I personally recommend jasmine or brown rice





How to make boiled egg : boil the eggs in a saucepan for 20 minutes on a high heat, once cooked soak them in a cold water on a bowl for 5 minutes, it is easier to peel when the egg was soaked on cold water.

Feeling Homesick With Filipino Foods

Philippines but I forgot which airport this was
It's been almost a year since my mom passed away, I didn't even notice where  the time went? I could still remember when I was there. I was in the Philippines January 2013 to say goodbye to my mom for the last time during that time I was 4 1/2 months pregnant with my youngest son. She passed away the 28th of this month. The last time I physical hugged and kissed her was 2010 when my two kids that time and I time moved to USA. We were at the NAIA when we bid goodbye. It was a hard trip for a pregnant mom like me. I was glad that they allowed families, elderly and me  to board the plane first and I made sure I sit next to the lavatory. Anyway, I don't want to make my readers cry but I just want to share some of the food that I had when I was there. I ate a lot of different Filipino foods especially the sticky rice. One time, my sister and I went to the nearby mall called Gaisano in General Santos City.

We had lunch in one of the  food chains,  I ordered these because these were just some of the Filipino foods that I so missed. In fact I am craving for these food right now, if only there's a Filipino restaurant nearby I will frequently visit to buy food. In the photo below you will see two cups of  white rice, seaweed salad, jack fruit salad with coconut milk, roasted pig(yay!), raw fish salad and sweetened iced tea. If you wonder what is that black color sauce, that is vinegar, soy sauce with chili. You will always find that sauce in most of the Philippines restaurants or food chains. 






















Here's how the food chains look like in General Santos, Philippines. Every food chain has their own specialty when it comes to food. Also, only in the Philippines where you can find spaghetti in almost all restaurants and food chains.




















My trip was between 22 to 24 hours long, it was a very exhausting and boring because I traveled alone  but it was worth it, I got to spent time with my family after more than two years of being gone.

Baby Nose Sucker With Molds

A good friend of mine tagged me on Facebook after she re-posted this. My friend was concerned about my baby even though she wasn't sure if I really have a nose sucker like this. The post that she shared to me was from a mom named Chelsea. Chelsea got a nose sucker from the hospital where she had her baby. One day Chelsea saw  an article of another mom who cracked open her baby's nose sucker and it was filled with mold. She was worried and did the same thing and this is how her baby's nose sucker looks like.  We would assume that maybe both moms didn't clean the nose suckers enough, but the truth about mold is that they grow where there are trapped moisture. No matter how much cleaning you do if you can't dry it enough, mold can grow.  I got a nose sucker exactly like this seven months ago from the hospital where I gave birth to my baby S. I used it many times on him when he was congested due to cold especially during bath time.  I was not given any instructions on how to clean it and I didn't ask either assuming that I won't have any problem cleaning it. I thought I could just use hot soapy water and squeeze it out many times then it is all dry and clean. I was wrong about what I thought because after reading this on Facebook, I cut and opened my son's nose sucker too. These are how mine looks like

See those tiny dots of mold? Although mine is not as bad as the picture from Chelsea but who knows how much mold is gonna grow if I continue to use it on my baby. I am glad I read her post and didn't think twice on checking on it. I cleaned my nose sucker with hot soapy water and squeezed the water out many times but still it didn't stop the mold to grow. Molds are harmful for our babies health. My son had been sick for two weeks due to cold but I can't say it was from the mold because flu virus is going around too.

I read online that you can use vinegar and hot water in cleaning nose sucker. You can also soak it on a water with  bleach and dry it out. I threw mine away and my dear hubby bought a new one where I can open, wash and dry it. The brand is safety 1st and I tried it on him twice. I can't say yet how good it is since my son kept pushing my hand away. It can't do what it supposed to do but I will update you next time. My Healthy Scrambled Egg For Breakfast




















I love using a variety of spices when I am cooking even on my scrambled eggs. Aside from it makes our food scrumptious, spices has a lot of health benefits too. Spices helps boost our immune system and each of them has a role in treating minor to major illnesses. What's funny is that my picky eater son loves my scrambled egg. He requested me to cook this for breakfast.  We usually eat it with steamed jasmine rice and hot beverages (hot chocolate or coffee for me and hubby). If you want to make one, here is my  the recipe.



What you need:

  • 6     pcs eggs
  • 1/2  cup milk
  • 1/4  slice green bell pepper
  • 1     pcs tomato (remove the seeds)
  • 4    cloves garlic
  • 1/4 slice of big onion
  • black bell pepper(use sparingly)
  • salt (use sparingly)
  • 2 tablespoon vegetable oil 



Procedure:

  • Put eggs and milk in a mixing bowl and beat  until it looks bright yellow evenly, set aside
  • Chop green bell pepper, onion, tomato and garlic
  • Set the stove in medium heat, place the frying pan, it's great if you have a non stick pan, but if you don't have one its okay, add the oil when the pan is already warm
  • Saute chopped spices with 5 seconds interval starting with garlic, add the onion, then tomato and lastly bell pepper. Stir for 1 minute, do not overcook.
  • Add the egg mixture and do not stir. Let the egg cook for 1 minute or until the bottom part set. Stir while adding a dab of black pepper and  salt. Continue stirring until the uncooked part become firm. Transfer the egg to the plate,


This scrambled egg can be eaten with toasted bread too.

What's For Lunch? #Papa Murphy's Pizza!!!

Today I got done babysitting early but it was already past lunch time. After dropping off the baby, I drove off  towards the bank to deposit the check that I received as a payment. Then I went to the gas station to fuel up and was planning to head back home to cook lunch for me and the kids. My stomach was grumbling and I didn't have enough time and energy to cook. I decided to drop by at Papa Murphy's to buy freshly made pizza. I ordered family size regular crust with extra cheese, extra sauce, ham,  bacon and sausage. What I like about Papa Murphy's is that I get to bake it at home and eat it fresh and warm.

When I got home the kids were happy when they saw what I brought with me. We bake it right away and while waiting we set up the table and grab our eating utensils. 




Here's a slice of pizza for me, aahhhh it was deliciously humongous. A great reward for myself after a short day of work.

This Is How I Eat My Vanilla Flavored Icecream

You scream!!

We all scream for ice cream!!

My children learned this from my mom-in-law. Whenever we have a bowl of ice cream, she recites these words and I think it's a fun way of saying we all want ice cream.


I always have a sweet tooth and whenever I crave for sweets I either grab a homemade cookies, a candy or a bowl of ice cream. Tonight, I feel exhausted from a whole day of running errands and taking care of my kids. To top that off, I am also a full time nanny of a beautiful baby girl as old as my youngest son. In short my hands are full and it requires a lot of energy to multi-task. Tonight I am doing my blogging duties but I have no energy left and I feel lethargic because of body pains doing laundry, climbing up and down the stairs and carrying the babies. So, I decided to reward myself with a bowl of ice cream and with Hershey's chocolate syrup on top. Hershey's is my hubby's choice of chocolate syrup and so we stick into it. So so yummy and actually I am having yogurt vanilla flavored ice cream. Yogurt is good for you because it has live good bacteria on it that helps you to have a healthy digestive tract.  I feel my strength is coming back and now ready to do more chores.

Homemade Baby Puree #Carrot With Butternut Squash

I have been making my own baby puree for several months. I believe that it is safer and healthier for my baby. My puree doesn't have any preservatives, it's economical, the fruits and vegetables are fresh and I know what's in it. The only way of preserving it is through freezing. When feeding, I usually add water or breast milk to make it less sticky. My baby takes multivitamins and I add that too. That way it's easier for me to give him is vitamins since it has a bitter taste. Today, I made carrots with butternut squash   and apple with butternut squash purees. I usually, add pumpkin pie spice during blending, it gives that extra boost of  pie taste. My baby just love it. Making this is very easy and I will share to you how.



Carrot with Butternut Squash Puree


What you need:

2 cups chopped carrot
2 cups chopped butternut squash
1/2 teaspoon pumpkin pie spice
1 1/2 cup water


Procedure:

  1. Roast the peeled and chopped carrots and butternut squash for 45 minutes in 425 °F. 
  2. After roasting, let it cool for few minutes before blending.
  3. Place the roasted vegetables on a baby food blender, add 1/2 cup water, pumpkin pie spice and start blending. During blending you can add a small amount of water until you reached your preferred consistency of the puree. Do not add too much water or else it will turned into juice. 
  4. When you are done blending, put the puree on ice cube trays and freeze overnight.
  5. Once the puree is frozen, remove it from the tray and put it in a Ziploc bag. Write a label for puree's name and date it was made. 

If you want to make the apple with butternut squash puree, you can use the same procedure above. I made 4 trays of baby puree because I will be sharing some to my friend's babies. I hope your babies will love it too.

(TGIS) #Thank God It's Saturday!!!

Thank God this week is over because it has been a challenging week for my family. We have been  sick with cough, cold and fever. In fact, my hubby had to cancel work and stayed home the whole week, he was supposed to go out East to deliver a load with his brother. He had the symptoms of a flu but, we weren't sure if he really got it. He had to used his vacation time to afford not going to work. He has 3 weeks paid vacation and 3 days paid personal time from work. My kids and I got either a cold or fever but we didn't go and see a doctor, we just all rested, ate well and slept good. Although it wasn't how we wanted to spend my hubby's vacation time, we're still thankful that we got to spend time with him. He is seldom home due to his kind of work and we support and understand him. He is a type of man, husband and dad who is a good provider and cares about his family much. 

Everybody is feeling better today and hubby made this delicious french toast partnered with fried sausage for breakfast. I was planning to make egg omelette with tomato and onion but I got busy with the baby, so all we had was these and of course a cup of coffee for me and hubby and fruit juice for my kids. Hubby blessed the food with a prayer and we all devoured it.



After two days of cold snap, the weather has gotten better. Our driveway looks like a skating ring, the snow is melting due to the weather is getting a bit warmer. It's dangerous to walk outside especially if your shoes doesn't have good cleats. I would suggest you wear  football shoes, joke!!























See the pavement covered with ice? I will never set foot there If I don't want body pain. I am glad we don't need to go anywhere today, we got our shopping done yesterday and no commitments or activities outside home.























Sipping a  hot cup of green tea with honey on it. Honey had been studied for its health benefits and I found out it is good for cough and throat irritation. It also helps you sleep better. Green tea has a lot of health benefits too which include being an antioxidant.I will not discuss all the health benefits as I am not an expert on these matter  I just love to do research and read about health stuffs. I usually drink coffee or tea when I am writing for my blog, I found it helpful in thinking what to write. The caffeine helps my brain to work harder.

Finally! My Alexa Rank Came Down




















I am doing  a chicken dance right now!! ha ha. After  few weeks of hard work, my alexa global rank had finally came down from 3 million  to 53,861 and my traffic rank with in the US is even greater. You might be wondering why I want it to go lower? For bloggers the lower your alexa is, the better. Lower number means there are more people visiting your site and you have good traffic. Since most advertisers check the alexa rank of a blog before they do business.

When I bought my domain name I think about  a month ago, all my previous alexa rankings under my blogspot name were gone and it was showing no data available. I was freaking out almost gone mad because I thought I did something wrong. I was appeased when I realized there was nothing I can do to get my previous ranking back instantly and I have to start over and let time work. My friend told me not to freak out, it will come back under my new domain name. So, I stopped worrying and waited for few weeks.  Lo and behold, it is down and still going done and now it's 5 digits on my alexa global traffic rank. Aside from the ranking, my alexa widget that shows my ranking to my readers is finally working. I had figured out the problem. My blogging career is getting better and I would like to thank all my friends, readers and co-bloggers who are there supporting me by just simply visiting  my site and reading my posts. Thank you all and to God be the glory.

Our Frozen Windows



These are our windows upstairs in our master's bedroom covered with ice and I can barely see the outside. This photo is the upper part of the window. It has been very cold since Monday and most of the schools were closed until today. I am glad that my kids are staying home because we were all sick with cold and fever. I don't want them or me to go anywhere. They said it has been  the coldest days of this year  where the temperature  is below zero and the windchill is -31 to -40°F and the coldest since 1996 . We were told to stay home and keep warm because we will get frostbite on the exposed skin and the worst case is hypothermia. The frozen window is due to the humidity inside the house and the lesser ice you see means the window is sealed up properly. Humidity inside the house is good as long as it is not too much. Too much humidity will give you a problem with mold.



Another photo of the lower part of our window, not fully covered because it is closer to our heater. We went to Walmart last night and my nose felt like burning or cracking due to coldness. There were few people shopping and few cars running on the street. We would have stayed home if we didn't need water for our humidifier. My son's school will resume their classes tomorrow and I hope my kids will feel better.

My Filipino-American Babies

Our children are our pride and joy. They are God's gift and blessing to us. We have been blessed beyond measure with happy, healthy, good looking, bubbly and restless sons. Here are our spring rolls, our  half filipino-half-american babies. They got their Filipino genes from me and their American genes from my hubby. My sons  are 5 years apart and both names start with S.


This is Spring roll 3, my 6 months old baby. In the picture, he just opened his gifts and trying to open another one from his Grandma or  Lola Merla. He got some one-sees and a Dino stuffed toy. He loves to roll over to his tummy and loves to eat his homemade puree. I wish he could stay a baby for a long time so I can enjoy cuddling him longer.







This is Spring roll 2, he loves to sing, draw and read books. He is a Kindergarten in a Christian school. My baking and cooking buddy. A lot of people admired his looks and told me that he could be in a movie industry. LOL, I agree, but it is up to my son whatever he wants to do as a career when he is older. 








Spring roll 3 has a lighter skin, hair and eye color than Spring roll 2, but they both look handsome on their own way. Spring roll 2 loves his baby brother so much and he says I love you every day.I also have another son, he is the oldest among my kids, but his dad is Filipino so for now I am showing my fil-am babies. He is also as good looking as his younger brothers. My oldest son's name also starts with S and he is 5 yrs older than my middle son. I will show a picture of him next time. 

For us as parents, all of our kids are smart, loving, happy, comedian and overly confident. Why did I say overly confident? Because they are never shy, not afraid to try new things and are very outgoing. Praise God for the wonderful children He entrusted us.

Christmas Crafts Made By My Kids

Last month, we were invited by my friend to come to their church, they were having a 3 day activities and presentation called Enter The Gates Of Bethlehem. They had  a presentation of Jesus birth, craft making for kids and they showed animals you usually see in Jesus time which I will show the pictures on my other post. I just want to show the crafts that my kids did that night. 


Here's my son, Spring roll 2, making his snow man. I helped him with applying the glue, but he did most of the job. He glanced at the instruction when he didn't know what to do next. 





Here's the finished job, it was easy and simple but cute. My older son made the snow man on the right and it looks derailed. He was acting silly and wanted to design his in his own way and not following the instruction on the paper that came with it. I love the message in the snowman's heart.




This star was another craft they had and Spring roll 2 decorated it. We hung this star on our Christmas tree. 



My family had a great time that night and  we were looking  forward for their next year's activity.

Filipino Food For New Year's Celebration

How was your New Year celebration? Mine was quiet and although we went to bed late, we didn't do anything special. No karaoke, no fireworks and no Media Noche. My older son kept asking me if we could have a midnight snack and watch the fireworks. Unfortunately, my hubby was too tired to go anywhere and we didn't know if there were any fireworks display in our city. My son misses how we celebrate New Years in the Philippines, not that US is boring, it's just that we do things differently over there. I would say it is more fun. 

Hubby and I had our couples devotional on that  midnight while the kids were already in bed. I remembered, in the Philippines we have what we called Media Noche (midnight in Spanish) food in welcoming the New Year before or during the fireworks show. My friend and I  decided to celebrate New Year during the day instead of midnight with Filipino foods. Since she is a great cook than me, she made the viands while I made the desserts. She gave me some of her food and I gave her mine, we called it food swapping. I made mango float and dark chocolate chip coconut cookies. These were the food she prepared and I can tell you, she can start  a restaurant business.

Ah! These foods made us feel we were back home, back in my mom's kitchen. We ate these foods with steamed white rice(jasmine). I can say that we faced the New Year eating healthy. I don't have the recipes for these, maybe on my next post I'll be able to share only if she has time to give it to me. Thanks friend for the delectable foods.
