Simple And Easy Recipe

Hi awesome readers, how's your Monday going? It's  61ºF  here but it  has been cloudy and was raining since this morning. I'm glad it finally stopped, we would like to go out for a walk for some fresh air. We had a great lunch today. I made some delicious food that me and my kids love. They are very easy and my kids even helped me preparing them. I made Spicy noodle soup with mixed vegetables, Fresh vegetable salad with shredded rotisserie chicken and hard boiled egg and lastly Fried rice with mixed vegetables and shrimp.

Spicy noodle soup with mixed vegetables

2 packs 3 oz Ramen noodles soup(any flavor) mine is chicken
4 cups of water
1/2 c mixed veges

Bring water to boil, add the noodles, the seasoning and the frozen mixed vegetables. Boil for 2 minutes, removed from the stove and served.

.
Fresh vegetable salad with shredded rotisserie chicken and hard boiled egg

3 cups ready to eat vegetable salad(store bought)
1/2 c crouton
2 tablespoon salad dressing
1 hard boiled egg(peeled)
1/4 c rotisserie  chicken

Mix everything in a bowl and you are ready to go. My rotisserie chicken was a left over from the weekend we bought from the store. I warm it up for a minute in the microwave before adding to my salad. Delicious and healthy, perfect for me, especially I am trying to lose weight and getting back to healthy diet.

Fried rice with mixed vegetables and shrimp

my middle son's lunch: hard-boiled egg, noodles and fried rice

3 cups steamed rice
1/2 cup mixed vegetables(carrot, corn and green beans)
1/2 precooked shrimp
1/4 c onions(cubes)
6 cloves garlic
black pepper and salt
bacon bits( sprinkle only)
1 tablespoon soy sauce

Saute garlic and onion, add the rice and continue stirring until spices are evenly distributed. Add shrimp and mixed veges, cooked for 3 minutes while occasional stirring it to not burn the rice. Season with black pepper, soy sauce, salt and bacon bits, stir, removed from the stove and serve.

My 6 month old baby love fried rice and enjoyed the vegetables especially the green beans. I hope you all have a great afternoon. Bon Appetit!
